Our Signature Ricotta Pancakes

Everyone that eats these pancakes asks for the recipe, so here it is. They are so good!!

Serves 6-8

2 cups flour
1 tsp. baking soda
1 Tab. baking powder
1/2 cup sugar
zest of an orange
zest of a lemon
3 eggs seperated
3/4 cup sour cream
2 cups ricotta cheese
1 cup milk
2 tsp. vanilla

Place dry ingredients and zest in a large bowl and whisk to blend. Seperate eggs and set aside. In another bowl whisk together ricotta, sour cream, egg yolks, vanilla and milk. Pour into dry ingredients and blend well but do not overbeat.If too thick add a little more milk. Mixture should be thick but still flow nicely. Whip egg whites to soft peaks. Fold into batter.

Preheat griddle to 275 degrees or med low heat. Drop 1/3 cup of batter on griddle sprayed with Pam. Cook until bubbles appear on the surface, flip and cook until bottom is nicely browned. Keep warm until served. Serve with citrus syrup.

Citrus syrup
2 cups maple syrup
1/4 cup orange juice
1/4 cup lemon juice

Place all in sauce pan and warm.

 

Chocolate Chip Scones

These scones are light and flavorful, great with a cup of coffee of tea

Makes 8-10 scones
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 T. cold butter, plus 2 T. melted
1/2 cup sour cream
1 large egg
1/4-1/2 cup milk
1 cup chocolate chips
Sugar for sprinkling

Pre-heat oven to 400 degrees

In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt. With a pasrty cutter or fingers work in the butter until mixture resembles fine crumbs. Stir in chocolate chips. Mix the egg with the sour cream. Add sour cream mixture and just enough milk so that mixture comes together to form a soft, sticky dough. turn out onto floured surface and pat into a circle 1 1/2 inches thick. Take a floured knife and cut circle into wedges but do not pull apart. Brush top of circle with melted butter and sprinkle with sugar. Place on greased baking sheet and bake a 400 degress 20-25 minutes or until nicely browned and toothpick inserted comes out clean. Serve warm with vanilla butter (recipe below)

Vanilla Butter

2 sticks unsalted butter
2 tsps. vanilla
2 T. powdered sugar

Incorporate the powdered sugar and vanilla into the butter. On a sheed of plastic wrap spoon out the butter. using the wrap form int a log. Wrap well and chill at least 1 hour. Butter when hardend can be sliced into pats.
